Pork Chops is what we were craving this week, minus the applesauce and Brady reunion. So after going online and finding a handful of interesting choices, we decided on this Vietnamese Style Pork Chops recipe from Cooking Light. The sweet and spicy rub with its nice blend of spices, ginger and brown sugar is what won us over. We served it with asian green beans that we found here, along with brown rice and garnished cucumbers.
The spice rub was simply irresistible — it had just the right amount of heat with a wonderful aromatic combination of flavorful sweetness that the green onions rounded out nicely. The green beans were a bit on the sweet side, so we added some hot chile sauce to spice them up and balance the flavor, and they were tasty. Luckily we have enough spice rub leftover for us to try out with our chicken tomorrow, and we can't wait!
